Soups and stews can be made up to 2 days in advance and reheated gently, though it's best to cook the tortellini separately and add it fresh so it doesn't turn mushy sitting in the broth. Creamy sauces can also be made a day ahead and reheated slowly with a splash of extra cream or stock to loosen them, but hold off combining everything with the tortellini until close to serving. Bakes and casseroles are the exception: you can assemble them fully a day ahead, covered and refrigerated, then bake straight from the fridge, adding an extra 5-10 minutes to the cooking time.
